Tropical Oat Bars Recipe
These bars are great for breakfast on the run or as a snack. You can change the fruit or nut mixtures to change the flavour...very delicious and satisfying!

Ingredients
  • 3.5 cups oats (toasted until golden brown 15-20 min)
  • 1 cup chopped nuts , I use a mix of almonds, walnuts and pecans. But you can use anything you have available.
  • 1 cup dried fruit chopped. I use 1/3 c raisins, 1/3 c dates, 1/3 c pineapple.
  • 1/3 cup shredded unsweetened coconut
  • 2/3 cup margerine
  • 1/2 cup brown sugar
  • 1/3 cup honey or agave nectar
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • cinnamon and nutmeg to taste

Directions
  1. Toast oats in oven on greased cookie sheet 15-20 min @300 degrees or until golden brown.
  2. Mix rest of ingredients together.
  3. Add oats, and stir well so that everything combines.
  4. Put in mixture in a parchment paper lined brownie pan.
  5. Firmly press the mixture into the pan so that it becomes dense. You can use another brownie pan to press down or even a heavy book lined in parchment paper.
  6. Bake @ 350 degrees for 15-20 minutes or until golden brown.
  7. Let the "bar" cool in the pan, and slice into bars.
  8. Enjoy!!!
