How to make it

  • Preheat oven to 350°. Grease and flour a tube cake pan or Bundt pan. Mix all ingredients with a mixer on low speed until blended. Beat on high speed for a full 3 minutes, scraping sides as you go. Pour batter into prepapred pan and for about 50 minutes (**see note following). Test cake for doneness.
  • Cool for 25 minutes in pan on a rack. Loosen bottom and sides from pan. Remove from pan when completely cooled. Sprinkle with powdered sugar if desired .

    This is a rather different cake, and it is a breeze to make as it relies on boxed items. It also lends itself to a "diet" version, which I found just as good as the original: substitute egg beaters for eggs, applesauce for oil, sugar-free pudding for pudding. I recommend using a cheap merlot instead of a mogen david-style, way-too-sweet wine (but that's just my preference for a less-sweet cake). Also, more spice is nice. I substituted for the nutmeg 3/4 t. cinnamon and 3/4 t. ginger. Interesting recipe -- thanks for sharing! It's a little like eating mulled wine. :)
