Ingredients
  • 3-4 eggs beaten
  • 1 cup evaporated milk
  • 1 tsp. salt and dash of pepper
  • 1-1/2 cups grated Swiss cheese
  • Note: I have used Feta cheese and ricotta as well and they are just as delicious.
  • 1 box chopped spinach thawed, cooked for 10 minutes, drained well and cooled to room temperature
  • 3 oz. Philadelphia brand cream cheese, softened
  • 1/4 cup green onion, sliced
  • I like to add a 1 garlic clove, minced
  • 1 unbaked pie shell

Directions
  1. In a large mixing bowl, with an electric mixer, mix 3 eggs, 1 cup evaporated milk, salt, pepper and cream cheese.
  2. Carefully fold in to mixture the spinach, stirring to blend.
  3. Add Swiss cheese, stirring to blend.
  4. Add onions, stirring carefully to blend.
  5. Pour entire mixture into an unbaked 9-inch pie shell.
  6. Bake at 400 degrees for 30 minutes.
  7. Test for doneness with a clean knife.
  8. After removing from oven, sprinkle with Parmesean cheese, if desired.
  9. Let pie sit for 10 minutes before slicing.
