How to make it

  • In a large mixing bowl, with an electric mixer, mix 3 eggs, 1 cup evaporated milk, salt, pepper and cream cheese.
  • Carefully fold in to mixture the spinach, stirring to blend.
  • Add Swiss cheese, stirring to blend.
  • Add onions, stirring carefully to blend.
  • Pour entire mixture into an unbaked 9-inch pie shell.
  • Bake at 400 degrees for 30 minutes.
  • Test for doneness with a clean knife.
  • After removing from oven, sprinkle with Parmesean cheese, if desired.
  • Let pie sit for 10 minutes before slicing.
