Nice quick way to fix fish that is not only healthy, diabetic friendly but also tastes darn tasty.

Ingredients
  • 1 lb fish fillets
  • 1/3 C finely crushed cheez-it crackers
  • 1 ts. parsley flakes
  • 1/2 C lowfat Catalina salad Dressing

Directions
  1. Preheat oven to 400°F.
  2. Mix crackers and parsley.
  3. Brush both sides of fish with Catalina Dressing.
  4. Coat one side of fish with cracker mixture.
  5. Place fish, cracker side up on cookie sheet sprayed with nonstick cooking spray.
  6. Bake uncovered until fish flakes easily with fork. 10-15 minutes.
