How to make it

  • Scrub yams and cut in half if large. Boil in their jackets until tender. Cool; slip the peels off and mash well. Stir in sugar and salt. Whisk together the eggs, milk, vanilla, and 4 tablespoons melted butter.
  • Stir into the mashed yam mixture until smooth and well blended. Spoon the mixture into a lightly buttered 2-quart baking dish. Combine remaining ingredients; sprinkle over the yam mixture. Bake at 350° for 35 to 45 minutes.

    Thanks for the recipe. Mother thought she bought some sweet potatoes but they turned out to be yams. There are lots of people out there that don't know the difference until cooked. Now they won't have to lay in the pantry until they start to rot. I don't think there is a more putrid smell than rotting potatoes.
