Ingredients

125g butter or margarine (1/2 cup)

125 ml sugar (1/2 cup)

1 egg

375 ml cake flour (1 1/2 cup)

2,5 ml baking powder (1/2 teaspoon)

1 ml salt (1/4 teaspoon)

1 ml vanilla essence (14 teaspoon)

Lemon cookies:

1 ml lemon juice (replacing vanilla essence) (1/4 teaspoon)

2 ml lemon rind (3/4 teaspoon)

Spice cookies:

2 ml mixed spice (replacing vanilla essence) (3/4 teaspoon)

Coconut cookies:

150 g margarine ( instead of 125 g) (1/2 cup + 2 tablespoons)

200 ml coconut (replacing vanilla essence) (3/4 cup)

Chocolate cookies:

150 g butter or margarine (instead of 125 g) (1/2 cup + 2 tablespoons)

200 ml coconut (3/4 cup)

6 ml cocoa (replacing vanilla) (1 tablespoon + 1/4 teaspoon)

Custard cookies:

350 ml flour (instead of 375 ml) ( 1 cup + 2/4 cup)

75 ml custard powder (add with dry ingredients) (1/4 cup + 1 tablespoon)

Directions

Cream butter or margarine and sugar.

Add the egg.

Mix well.

Mix flour, baking powder and salt.

Add to butter mixture.

Mix well.

Add vanilla and mix well.

Process into desired biscuit shapes.

Bake at 180 degrees C (360 deg. F) for 12 minutes.

You can dip it in chocolate aswell.
