This is a low fat version of a classic Scotch Egg,iideal for packed lunches, picnics, buffets, salads or with fries, baked potatoes etc

Ingredients
  • 6 eggs, hard boiled
  • 12 oz ground pork
  • ½ small onion, chopped
  • Salt & Pepper to taste
  • 100g cornmeal (polenta)

Directions
  1. Preheat oven to 180
  2. Blend pork, onion & seasoning together ( best done in an electric mixer for a finer result).
  3. Shell eggs
  4. Cover each egg with the 'sausage' mixtue and form in to a ball.
  5. Dip in polenta and bake on a baking tray sprayed with low fat spray for 20 - 30 minutes in a hot oven until firm.

I like Scotch eggs, usually eaten at the Breweries or Irish Pub. Which I don't do too often.
