How to make it

  • Preheat oven to 180
  • Blend pork, onion & seasoning together ( best done in an electric mixer for a finer result).
  • Shell eggs
  • Cover each egg with the 'sausage' mixtue and form in to a ball.
  • Dip in polenta and bake on a baking tray sprayed with low fat spray for 20 - 30 minutes in a hot oven until firm.

    I like Scotch eggs, usually eaten at the Breweries or Irish Pub. Which I don't do too often.
