Ingredients
  • Venison: I used approx 1 1/5 lbs of loin, orignal recipe called for roast/steak but I was being cautious since I didn't know how strong this buck would be.
  • 2 - 4 eggs, beaten. recipe called for 2, I wasn't comfortable with the coverage
  • flour, salt, pepper - I didn't use salt, the soup has plenty
  • Golden mushroom condensed soup, do not dilute
  • oil

Directions
  1. Slice venison into 1/4 - 3/8" thick slices/medallions
  2. Beat eggs, soak venison in eggs for 20 minutes
  3. towards the end of the soaking time, heat your oil and doctor up you flour. (since I didn't use salt, I peppered when they were in the pan) and preheat your oven to 350 degrees.
  4. Let extra egg drip of the venison but do not rinse. flour lightly and brown each side quickly in the oil. Let rest on paper towels briefly.
  5. Spray 9 x 13 with non-stick spray, place deer in pan, and spread the undiluted soup over the top. Cover w/ foil and bake for approx 50 minutes, depending on how thick you cut your meat.

I like venison anyway you cook it, but this is the way i always cooked rabbit, which i don't like. I could at least eat it this way.


This sounds really good! I'm trying it tonight using two backstrap steaks. Soaking in egg as I type. I might even toss in a couple more seasonings. I have a ton of recipes for venison if anyone wants them. Some are excellent. I compiled a recipe book from finding different ones on the internet.

PS This venison dinner was great! I didn't have the mushroom condensed soup so I used cream of celery and I did add half a can of milk. There was enough flour from browning it, to make it a wonderful gravy. My hubby and son and grandson liked it. I sent it home with our son so the others could try it. I also gave some venison to Corey so he could try it at home. Thanks!


Perlandra, you are welcome! sounds like you took a basic recipe and made it your way....the best way to cook. I have trouble posting recipes b/c I never follow one and am not the best at paying attention to what I add when I am grabbing spices from the pantry and throwing them in. Isn't it the worst when you make something outstanding and you aren't sure you can do it again on the first try?!!? :-)

Alterations


This recipe sounds great. I have a slight alteration to suggest!!

Before browning the meat, sautee sliced onions. Take out the onions, put aside, and then add the meat.

I like to use cream of mushroom soup instead of the golden, and I also add milk until it is of gravy consistency.

Place the meat, onions, and soup in the baking dish, and bake as directed!

This dish is also great with processed cubed venison, or cubed steak. I always soak the venison in salt water to remove the gamey bood, and drain on paper towels before cooking it!!

This dish is great over mashed potatoes or rice!
