How to make it

  • Cream shorteneing and sugar
  • Add eggs beat well
  • Stir in vanilla and lemon peel
  • Sift all other ingredients together
  • Add dry ingredients to the creamed mixture
  • Chill overnight
  • Roll on a slightly floured board 1/8 inch thick
  • cut with a 2 1/2 inch cutter place on a cookie sheet
  • add 1 tsp filling and spread almost to the edges
  • Place another round over the top and seal edges with a fork
  • Flute the top to release the steam
  • Bake 8-10 minutes in a 400 degree oven
