I love fettuccine and linguine. Pasta served with seafood seems like the perfect combination.

Ingredients
  • 400g fettuccine
  • 1 tbsp olive oil
  • 1 finely chopped medium sized onion
  • 3 crushed cloves of garlic
  • 3 medium sized tomatoes, seeded and chopped
  • 60ml white wine
  • 300ml light cooking cream
  • 600g cooked, peeled, deveined and tails intact medium prawn
  • 15g fresh basil

Directions
  1. Cook the fettuccine according to the package and drain.
  2. Heat oil in a large frying pan over medium-high heat and stir-fry the onion and garlic for 5 minutes.
  3. Add the tomato and wine and cook for 3 minutes before adding the cream.
  4. Bring to boil, then reduce the heat to simmer for 5 minutes until the sauce thickens.
  5. Stir in the prawns, fettuccine and toss.
  6. Gentle stir in the basil and serve immediately.
