Tarragon Vinaigrette Recipe
This is an outstanding vinaigrette and one that I make often. It is great over salads or even tossed with tomatoes, cucumbers and onions. It is bursting with flavor.

Ingredients
  • 3 cups extra virgin olive oil
  • 1 cup champagne vinegar
  • 1 large egg yolk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons parsley fiely minced
  • 1 tablespoon chives snipped into very small bits
  • 2 teaspoons chervil minced
  • 1 teaspoon tarragon minced
  • 1 tablespoon egg white sieved
  • 2 tablespoons picked cucumbers finely minced
  • 1 tablespoon capers
  • 3 shallots finely chopped

Directions
  1. Whisk all ingredients except egg yolk in a bowl until well mixed then add egg yolk and whisk vigorously to emulsify.
  2. Refrigerate and rewhisk before using.

I would love this on baby spinach leaves with croutons. great sounding dressing.


I'm curious about where you're from because some of the directions and ingredients are unfamiliar to me. Fresh chervil is very difficult to find in the US. Fortunately I have some growing in my garden. Also the recipe calls for 2Tb picked cucumbers. I'm assuming this means pickled cucumbers? There are many varieties of pickled cucumbers. Dill, sweet, gherkins, cornichons, etc


Sounds marvelous. I'm with jrein0254 about the chervil--love it, have to grow it myself, hard to do out here in non-coastal California.
