Tarragon Vinaigrette

- 3 cups extra virgin olive oil shopping list
- 1 cup champagne vinegar shopping list
- 1 large egg yolk shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 2 tablespoons parsley fiely minced shopping list
- 1 tablespoon chives snipped into very small bits shopping list
- 2 teaspoons chervil minced shopping list
- 1 teaspoon tarragon minced shopping list
- 1 tablespoon egg white sieved shopping list
- 2 tablespoons picked cucumbers finely minced shopping list
- 1 tablespoon capers shopping list
- 3 shallots finely chopped shopping list
How to make it
- Whisk all ingredients except egg yolk in a bowl until well mixed then add egg yolk and whisk vigorously to emulsify.
- Refrigerate and rewhisk before using.
