Asparagus Casserole Recipe
Do you want a recipe that will be the hit of the office luncheon? This recipe for an asparagus casserole always made the hit parade at our office.

Ingredients
  • 2 cans asparagus spears
  • 1 can cream of chicken soup
  • 2 cups sharp cheese, grate
  • 4 hard boiled eggs
  • 12 saltine crackers, crushed

Directions
  1. Heat soup with juice from one can of asparagus and set aside. Layer asparagus, sliced eggs, crushed crackers, then grated cheese in dish; pour soup over this layer. On the top layer, pour soup after crackers so cheese is last (on top).
  2. Cook until bubbly at 350 degrees.

I'm going to try this one, as I have asparagus from the garden! Must admit I rolled my eyes when I read "hard boiled eggs"...I'll try your altered version...sounds better. Thanks!

Alterations


Actually I omitted the eggs and used fresh asparagus instead. And I tossed in a can of corn and used the juice from the corn to mix with the soup. I switched from cream of chicken and used cream of mushroom instead also :)
