Crispy Potato Chicken Recipe
A really nice, crunchy chicken dish. My kids will not eat it because they think it's a little too strong. Play with the recipe according to what your family likes!

Ingredients
  • 4 boneless, skinless chicken breasts
  • 2 eggs
  • 2 Tbsp. water
  • 1/3 cup butter or margarine, melted
  • 1 and 1/2 cups mashed potato flakes
  • 1 Tbsp. grated parmesan cheese
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1 tsp. black pepper

Directions
  1. In plastic baggie or small bowl, combine parmesan, paprika, garlic powder, salt, and pepper.
  2. Beat eggs and water in a separate bowl.
  3. Put potato flakes in yet another dish.
  4. Dip chicken into egg mixture.
  5. Sprinkle with seasoning mixture.
  6. Dip in potato flakes.
  7. Put into a baking dish (I use a 9x13 glass casserole) with the melted butter (I usually just melt it in the casserole dish).
  8. Bake at 375 for 20-30 minutes, turning once.
