How to make it

  • Preheat oven to 350°.
  • To prepare meat loaf, remove 1 chipotle chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Chop chile. Combine chile, adobo sauce, onion, and next 14 ingredients (through ground turkey) in a large bowl, stirring to combine. Place beef mixture in a 9 x 5-inch loaf pan coated with cooking spray. Bake, uncovered, at 350° for 30 minutes.
  • To prepare topping, combine 1/4 cup tomato sauce, ketchup, and hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer registers 160°. Let stand 10 minutes before slicing.

    I've made this a few times on the smoker with venison or elk. I'll add red or yellow bell pepper, worcestershire, fresh ground cayenne and a dab of liquid smoke (if not smoking). Slice, place on a toasted ciabatta roll with your favorite fixins......DELICIOUS!!!

    I printed and made this one last week and it rocked. It had lots of flavor but the chipotle didn't kill you at all. Loved it and I'll make it again. Thanks for sharing.

    I see some knucklehead gave you a low rating. I got one for my meatloaf too and it must be the oats. This is a great recipe and the only thing I'd do different is use 1 cup of oatmeal and omit the breadcrumbs only because I prefer it that way.
