How to make it

  • Blend expresso beans in blender until finely chopped
  • Add ice cream and blend until smooth
  • Spoon mixture into pie crust
  • Cover and freeze about 2 hours
  • Drizzle with caramel sauce
  • Variation: Before putting on caramel sauce, I sometimes top with whipped topping then drizzle the caramel
