Sausage And Grits

- 1 cup uncooked grits shopping list
- 1 lb. ground sausage shopping list
- 1 onion, finely chopped shopping list
- 2 - 41/2 oz. cans chopped green chilies shopping list
- 8 T (1 stick) butter shopping list
- 2 eggs, beaten shopping list
- 2 cups grated cheddar cheese shopping list
- 10 dashes hot sauce (I like Cholula) shopping list
- 1 tsp. paprika shopping list
- 1/2 cup chopped fresh parsley shopping list
How to make it
- Preheat oven to 325
- Cook grits in 4 cups salted water until thick
- Saute sausage, breaking it into small pieces
- Saute onion in sausage grease and drain
- Add onion and chilies to sausage
- Add butter, eggs, cheese and hot sauce to grits
- Combine the grit mixture with the sausage mixture and pour into a 9 x 13 casserole dish and garnnish with additional small amounts of cheese, chilies, paprika and parsley
- Bake for 1 hour
- Can be refrigerated for up to 2 days before baking and it freezes well.
