Southwest Lasagna Rolls Recipe
A Southwestern twist to a family favorite. You'll never think of lasagna the same again. Serve as an appetizer or a main course.

Ingredients
  • 2 c canned black beans, drained
  • 4.5 oz. can chopped green chiles, drained
  • 1 c reduced-fat Monterey Jack cheese, shredded
  • 15-oz. container part-skim ricotta cheese
  • 1/2 tsp. chili powder
  • 1/8 tsp. salt
  • 8 lasagna noodles
  • 15.5 oz. jar salsa (no-salt-added)

Directions
  1. Bring to boil large pot of water, then cook lasagna noodles according to package directions. Drain well.
  2. Mix together the two cheeses, the chiles and the seasonings and stir well. Now, spread cheese mixture over one side of each cooked lasagna noodle. Spoon the black beans over the cheese mixture, until noodle is covered. Beginning at the narrow end, roll the noodles up like a jellyroll.
  3. Now place the lasagna rolls, with the seams facing down, into a greased 11- x 7- x 1 ½ -inch baking dish. Cover with aluminum foil and bake at 350 degrees for 25 minutes or until heated through.
  4. Serve rolls by spooning salsa over them and garnish with fresh cilantro sprigs (if desired).
