Scrumptious Scallops Recipe
Be sure to have a fresh loaf of French bread on hand to sop up the delicate sauce.

Ingredients
  • 1 lb scallops
  • 1 shallot, finely chopped
  • salt and pepper to taste
  • 1/2 cup good dry vermouth
  • 2 cups whipping cream

Directions
  1. Place scallops, shallots, salt and pepper in a saucepan with vermouth.
  2. Bring to a boil and simmer slowly for approximately 7 minutes.
  3. Remove scallops with slotted spoon and place in a bowl.
  4. Boil stock again and add whipping cream. Stir with whisk while returning to a boil.
  5. Lower heat and reduce this mixture to about half.
  6. Put scallops back into thickened sauce and heat through.
  7. Serve immediately garnished with parsley
