Scrumptious Scallops Recipe

Ingredients

1 lb scallops

1 shallot, finely chopped

salt and pepper to taste

1/2 cup good dry vermouth

2 cups whipping cream

Directions

Place scallops, shallots, salt and pepper in a saucepan with vermouth.

Bring to a boil and simmer slowly for approximately 7 minutes.

Remove scallops with slotted spoon and place in a bowl.

Boil stock again and add whipping cream. Stir with whisk while returning to a boil.

Lower heat and reduce this mixture to about half.

Put scallops back into thickened sauce and heat through.

Serve immediately garnished with parsley
