How to make it

  • Place scallops, shallots, salt and pepper in a saucepan with vermouth.
  • Bring to a boil and simmer slowly for approximately 7 minutes.
  • Remove scallops with slotted spoon and place in a bowl.
  • Boil stock again and add whipping cream. Stir with whisk while returning to a boil.
  • Lower heat and reduce this mixture to about half.
  • Put scallops back into thickened sauce and heat through.
  • Serve immediately garnished with parsley
