spicy but not hot. The vinegar gives it a little tanginess. Serve it over rice...good!

Ingredients
  • 2 lb. beef round steak
  • 1 green pepper, sliced
  • 1 T. vegetable oil
  • 1/2 c. dry red wine
  • 1 1/2 c. bottled marinara sauce (or homemade if you prefer)
  • 3 T. red wine vinegar
  • 1 1/2 t. cumin
  • 1/4-1/2 t. red pepper flakes
  • 4 oz. jar sliced pimientos, drained
  • salt and pepper to taste
  • cooked rice

Directions
  1. Place round steak in 8 qt. pot.
  2. Add 12 c. cold water
  3. Bring to boil
  4. Cover partially and simmer 1 hour until meat is tender
  5. Skim and discard from broth occasionally.
  6. Strain, reserving broth.
  7. Shred beef with fork
  8. In large skillet saute pepper in oil 5 minutes until soft.
  9. Add shredded beef and wine and cook 1 minute
  10. Add 1 c. reserved broth and marinara sauce, cumin, red pepper flakes and red wine vinegar
  11. Cover.
  12. Simmer 15 minutes.
  13. Uncover
  14. Simmer 15 minutes until thickened
  15. Stir in pimientos.
  16. Season with salt and pepper.
  17. Transfer to serving platter and serve with rice.
