How to make it

  • Place round steak in 8 qt. pot.
  • Add 12 c. cold water
  • Bring to boil
  • Cover partially and simmer 1 hour until meat is tender
  • Skim and discard from broth occasionally.
  • Strain, reserving broth.
  • Shred beef with fork
  • In large skillet saute pepper in oil 5 minutes until soft.
  • Add shredded beef and wine and cook 1 minute
  • Add 1 c. reserved broth and marinara sauce, cumin, red pepper flakes and red wine vinegar
  • Cover.
  • Simmer 15 minutes.
  • Uncover
  • Simmer 15 minutes until thickened
  • Stir in pimientos.
  • Season with salt and pepper.
  • Transfer to serving platter and serve with rice.
