A simple but new way to make sweet potatos. A nice side dish for Holiday meal. Has become a family favorite.

Ingredients
  • 2 Eggs
  • 1-Cup Sugar
  • 1 – 16 Oz. Can evaporated milk
  • (or omit the sugar and evaporated milk and use 1 can sweetened condensed milk instead)
  • ½ Cup 2% milk
  • 2 Cups grated uncooked sweet potatoes
  • 1-Teaspoon Cinnamon
  • 1-Teaspoon Nutmeg
  • 2 2/3 Tablespoons margarine

Directions
  1. Combine all ingredients (except margarine) and mix until smooth.
  2. Melt margarine in a shallow baking dish.
  3. Spoon sweet potato mixture into prepared dish.
  4. Bake at 350° preheated oven for 45 minutes or until toothpick comes out clean.
