Beef Or Chicken Fajitas Recipe
This marinade is so simple, and it makes really flavorful meat! Serve with tortillas, caramelized onions (slice and saute in oil on med-low heat for 20 minutes), sour cream, guacamole, cheese, and/or salsa.

Ingredients
  • 1 lb skirt steak (or 1 lb boneless skinless chicken breasts)
  • juice of 1 lemon
  • 1 small onion, sliced
  • 2 cloves garlic, mashed
  • 1/4 cup oil
  • salt/pepper

Directions
  1. Place meat in a gallon-sized ziploc bag, and add lemon juice, onion, garlic, and oil. Marinate overnight or at least for a few hours.
  2. Remove meat from bag; discard marinade. Salt/pepper meat lightly.
  3. Grill for 5 minutes on each side. Wrap in foil and let meat rest for at least 5 minutes before slicing.
  4. Slice into thin strips against the grain.
