Sweet Potato Pineapple Puree Recipe
A different side for Thanksgiving.I have made it with fresh pineapple with great results.Very good reheated the next day,if you have any.

Ingredients
  • 1/4 Cup,(1/2 a stick)Butter
  • 2 lbs,(about 3 large)Sweet Potatoes,cooked & peeled
  • 2/3 Cup(5 Oz)Evaporated Milk
  • 1 can(8 1/2 Oz)Pineapple,drained & divided
  • 2 Tblsp.Light Brown Sugar
  • 1/2 Tsp.Cinnamon

Directions
  1. Melt butter in large saucepan.Remove from heat.Add sweet potato,mash with fork.Add evaporated milk.Reserving 2 Tblsp.pineapple,add the rest to pan.Stir into sweet poatoes,sugar,cinnamon,cook on low heat,stirring occasionally for about 10 minutes,or until part of liquid evaporates.
  2. Serve warm,garnish with reserved pineapple.

Is this like mashed sweet potatoes with pineapple? I guess the would puree is throwing me a curve. It does sound good and I have some fresh pineapple to put in it.


I tried a microwave recipe like this one once. It wasn't mashed potatoes though. But I never thought about sweet potatoes and pinapple until I found that recipe. It was really good.


This sounds really good. I sometimes add pineapple to my sweet potatoes but never thought about mashing them. I'll give this a try.
