Hedgehogs

Any vegetable that can be mashed suits this treatment and is well received; try potato, kumara, parsnip, carrot, pumpkin looks great too! I am in love with this little guy!!! Children and veggies could easily get acquainted this way.
Ingredients
- For each serving allow: shopping list
- mashed potato, approximately 1 cup shopping list
- 1/2 cup raw carrot, cut into little sticks (or grated if you are in a hurry!) shopping list
- 2 currants or sultanas for 'eyes' shopping list
- 1 cherry tomato or small radish for a 'nose'? shopping list
How to make it
- Place the potato in a 'hedgehog shaped' pile on the plate, scatter the carrot over all but the pointy face end.
- Place the eyes and nose in position.
- Extras may be added to the mashed potato, like grated cheese and finely chopped raw mushroom if desired.
