Wellesley Fudge Cake

- Cake: shopping list
- 4 sq unsweetened baker's chocolate shopping list
- 1/2 c. hot water shopping list
- 1/2 c. sugar shopping list
- 2 c sifted flour shopping list
- 1 t. baking soda shopping list
- 1 t salt shopping list
- milk (2/3 c if using butter, 3/4 c if using Crisco) shopping list
- 1/2 c. butter (YES) or Crisco shopping list
- 1 1/4 c. sugar shopping list
- 3 eggs, unbeaten shopping list
- 1 t vanilla shopping list
- Frosting: shopping list
- 2 c. sugar shopping list
- 1/4 c light corn syrup shopping list
- 1/2 c. butter shopping list
- 1 jar maraschino cherries shopping list
- 1/2 c. milk shopping list
- 2 1-oz. squares unsweetened chocolate shopping list
- 1 t. vanilla shopping list
How to make it
- Cake:
- Place chocolate and water in top of double boiler
- Cook adn stir until chocolate melts
- Add 1/2 c. sugar
- cook and stir 2 minutes
- Cool to lukewarm.
- Sift flour once
- measure
- add soda and salt and sift three times (yes, you have to do it three times!!!)
- Cream butter and add 1 1/4 c of sugar gradually
- cream together until light and fluffy
- Add eggs, one at a time, beating thoroughly
- Add vanilla and blend
- Then add flour alternately with milk, beating after each addition until smooth
- Add chocolate mixture
- blend
- Pour into one greased and floured 13 x 9" pan
- Bake at 350 for approximately 30 minutes.
- Frosting:
- Sitr all ingredients, except vanilla, together in heavy saucepan over low heat until chocolate melts
- Bring to full rolling boil, stirring constantly
- boil one minute
- Off heat, beat until lukewarm
- stir in vanilla and continue stirring until good spreading consistency.
- (I put it in refrigerator for a minute or 2 when I get tired and then resume stirring)
- Frost cooled cake
- cut in squares and top each square with a cherry
