Wellesley Fudge Cake Recipe
It's a great tasting chocolate cake and well worth the work. Been in my family for years and everyone loves it.

Ingredients
  • Cake:
  • 4 sq unsweetened baker's chocolate
  • 1/2 c. hot water
  • 1/2 c. sugar
  • 2 c sifted flour
  • 1 t. baking soda
  • 1 t salt
  • milk (2/3 c if using butter, 3/4 c if using Crisco)
  • 1/2 c. butter (YES) or Crisco
  • 1 1/4 c. sugar
  • 3 eggs, unbeaten
  • 1 t vanilla
  • Frosting:
  • 2 c. sugar
  • 1/4 c light corn syrup
  • 1/2 c. butter
  • 1 jar maraschino cherries
  • 1/2 c. milk
  • 2 1-oz. squares unsweetened chocolate
  • 1 t. vanilla

Directions
  1. Cake:
  2. Place chocolate and water in top of double boiler
  3. Cook adn stir until chocolate melts
  4. Add 1/2 c. sugar
  5. cook and stir 2 minutes
  6. Cool to lukewarm.
  7. Sift flour once
  8. measure
  9. add soda and salt and sift three times (yes, you have to do it three times!!!)
  10. Cream butter and add 1 1/4 c of sugar gradually
  11. cream together until light and fluffy
  12. Add eggs, one at a time, beating thoroughly
  13. Add vanilla and blend
  14. Then add flour alternately with milk, beating after each addition until smooth
  15. Add chocolate mixture
  16. blend
  17. Pour into one greased and floured 13 x 9" pan
  18. Bake at 350 for approximately 30 minutes.
  19. Frosting:
  20. Sitr all ingredients, except vanilla, together in heavy saucepan over low heat until chocolate melts
  21. Bring to full rolling boil, stirring constantly
  22. boil one minute
  23. Off heat, beat until lukewarm
  24. stir in vanilla and continue stirring until good spreading consistency.
  25. (I put it in refrigerator for a minute or 2 when I get tired and then resume stirring)
  26. Frost cooled cake
  27. cut in squares and top each square with a cherry

Wow wow is all I can say I rather fall into chocolate then love :>))))))))) Thak u


All in the family have tried the various shortcuts with this recipe and it just does not fly...you have to go all the way through and follow to the T. That sifting 3 times DOES make a difference.
