Wellesley Fudge Cake Recipe

Ingredients

Cake:

4 sq unsweetened baker's chocolate

1/2 c. hot water

1/2 c. sugar

2 c sifted flour

1 t. baking soda

1 t salt

milk (2/3 c if using butter, 3/4 c if using Crisco)

1/2 c. butter (YES) or Crisco

1 1/4 c. sugar

3 eggs, unbeaten

1 t vanilla

Frosting:

2 c. sugar

1/4 c light corn syrup

1/2 c. butter

1 jar maraschino cherries

1/2 c. milk

2 1-oz. squares unsweetened chocolate

1 t. vanilla

Directions

Cake:

Place chocolate and water in top of double boiler

Cook adn stir until chocolate melts

Add 1/2 c. sugar

cook and stir 2 minutes

Cool to lukewarm.

Sift flour once

add soda and salt and sift three times (yes, you have to do it three times!!!)

Cream butter and add 1 1/4 c of sugar gradually

cream together until light and fluffy

Add eggs, one at a time, beating thoroughly

Add vanilla and blend

Then add flour alternately with milk, beating after each addition until smooth

Add chocolate mixture

Pour into one greased and floured 13 x 9" pan

Bake at 350 for approximately 30 minutes.

Frosting:

Sitr all ingredients, except vanilla, together in heavy saucepan over low heat until chocolate melts

Bring to full rolling boil, stirring constantly

boil one minute

Off heat, beat until lukewarm

stir in vanilla and continue stirring until good spreading consistency.

(I put it in refrigerator for a minute or 2 when I get tired and then resume stirring)

Frost cooled cake

cut in squares and top each square with a cherry

All in the family have tried the various shortcuts with this recipe and it just does not fly...you have to go all the way through and follow to the T. That sifting 3 times DOES make a difference.
