How to make it

  • Fry bacon over low heat in a heavy dutch oven until lightly browned.
  • Add dove breasts and brown.
  • Add onion and saute until limp.
  • Add the chicken broth and all other seasonings.
  • Bring to a boil and add the rice.
  • Cover and cook over low heat about 25 minutes or until the rice is tender and the broth absorbed.
  • Stir once with a fork.
  • Add the mushrooms and cook 5 minutes longer.
