How to make it

  • In a medium sized mixing bowl, beat eggs.
  • Add the rest of the ingredients and blend until smooth.
  • Pour, using 1/4 cup measure into a medium sized, hot, lightly greased non-stick skillet.
  • Turn skillet to evenly distribute batter in a circle.
  • Cook about 30 seconds per side.
  • Set aside cooked crepes on a plate and keep warm.
  • Serve with a dollop of sour cream and it is optional to garnish with grated nutmeg.
  • Fresh fruit or jam preserves are always a tasty topping.

    Not bad... although it does make me glad that I don't think I've developed a wheat intolerance afterall. I've narrowed down my problem to corn, but of course I have all this rice flour now that I have to use up.
