Crepes Made With Rice Flour

- 1 cup rice flour shopping list
- 1/4 teaspoon salt shopping list
- 2 eggs, beaten shopping list
- 1 cup 2% milk or you can substitute Soy or rice milk shopping list
- Note: To add a little extra flavour, you can use vanilla flavoured rice milk. shopping list
- 1 Tablespoon melted butter or margarine shopping list
- sour cream shopping list
- nutmeg, freshly grated shopping list
- your choice of fresh fruit or preserves shopping list
How to make it
- In a medium sized mixing bowl, beat eggs.
- Add the rest of the ingredients and blend until smooth.
- Pour, using 1/4 cup measure into a medium sized, hot, lightly greased non-stick skillet.
- Turn skillet to evenly distribute batter in a circle.
- Cook about 30 seconds per side.
- Set aside cooked crepes on a plate and keep warm.
- Serve with a dollop of sour cream and it is optional to garnish with grated nutmeg.
- Fresh fruit or jam preserves are always a tasty topping.
