Kale With Smoked Turkey Wing Recipe

Ingredients

3 pounds kale greens, cleaned, washed and chopped

2 tablespoons sugar

3 tablespoons Italian Dressing, clear-style works best

1/2 teaspoon black pepper

1 teaspoon salt

1 smoked turkey wing, separated into sections

1 quart water

2 teaspoons red wine vinegar

1 teaspoon olive oil

few shakes of hot sauce

Directions

Place first six ingredients in a very large pot.

Cover with the water.

Bring to a rolling boil.

Stir to make sure nothing is sticking to the bottom of the pot.

Reduce heat to a low simmer.

Cover the pot, loosely.

Simmer for about 2 and 1/2 hours, checking every so often for sticking.

When done, add vinegar, oil, and hot sauce, stirring carefully.

Serve over steamed white rice and pass additional hot sauce.
