How to make it

  • Place first six ingredients in a very large pot.
  • Cover with the water.
  • Bring to a rolling boil.
  • Stir to make sure nothing is sticking to the bottom of the pot.
  • Reduce heat to a low simmer.
  • Cover the pot, loosely.
  • Simmer for about 2 and 1/2 hours, checking every so often for sticking.
  • When done, add vinegar, oil, and hot sauce, stirring carefully.
  • Serve over steamed white rice and pass additional hot sauce.
