Ingredients
  • 3 pounds kale greens, cleaned, washed and chopped
  • 2 tablespoons sugar
  • 3 tablespoons Italian Dressing, clear-style works best
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 smoked turkey wing, separated into sections
  • 1 quart water
  • 2 teaspoons red wine vinegar
  • 1 teaspoon olive oil
  • few shakes of hot sauce

Directions
  1. Place first six ingredients in a very large pot.
  2. Cover with the water.
  3. Bring to a rolling boil.
  4. Stir to make sure nothing is sticking to the bottom of the pot.
  5. Reduce heat to a low simmer.
  6. Cover the pot, loosely.
  7. Simmer for about 2 and 1/2 hours, checking every so often for sticking.
  8. When done, add vinegar, oil, and hot sauce, stirring carefully.
  9. Serve over steamed white rice and pass additional hot sauce.
