Ingredients
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 (15oz) can pumpkin puree
  • 2c flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • Frosting:
  • 1 - 8oz package of cream cheese, softened
  • 1 stick (8 tbsp) of butter or margarine, softened
  • 4 cups of powdered sugar

Directions
  1. Preheat oven to 350 degrees. Spray one 13X9" cake pan, or two square 8x8" pans. Set aside.
  2. In a large mixing bowl, combine the eggs, oil, sugar and pumpkin. Mix until well blended.
  3. In a separate bowl, combine all the dry ingredients. Mix. Then add to the pumpkin mixture and stir until blended.
  4. Spread evenly into desired pan. Bake at 340 degrees for 20-30 minutes, or until toothpick inserted into center of cake(s) comes out clean.
  5. Allow to cool
  6. Frosting:
  7. Combine cream cheese and butter, mix well. Add the powdered sugar and beat until creamy.
  8. Spread on top of cake, and serve.
