White Chili Recipe
Tasty "white' chili made with chicken and beans instead of beef. Delicious and fun to "accessorize" your own bowl with different toppings. Bon appetit!

Ingredients
  • 1 Tbsp olive oil
  • 2 med onions, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 Tbsp fresh cilantro (or 1/2 tsp ground coriander)
  • 2 Tbsp lime juice
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp red pepper sauce
  • 1/4 tsp salt
  • 1 can (11oz) whole kernel corn, drained
  • 1 can (15-16oz) white kidney beans
  • 1 can (15-16oz) great northern beans or garbanzo beans
  • 2 cups chopped cooked chicken breast

Directions
  1. Heat oil in large frying pan over med heat. Cook onions and garlic until onions are tender.
  2. Stir in remaining ingredients except chicken. Heat to boiling; reduce heat. Simmer 20 minutes.
  3. Stir in chicken; simmer until hot.
  4. Serve with several bowls of "toppings' on the side: chopped green onions, diced tomatos, sliced avocado, shredded cheese, fat-free plain yogurt, crushed tortillas- for sprinkling over the chili. Enjoy!

Alterations


1 lb ground beef
handful dried gourmet mushrooms
only 1 can white beans
juice whole lime
no broth, just soaking liquid from mushrooms
kernals from 2 fresh ears of corn
2 handfuls chopped cilantro
1T toasted sesame seeds
1t cumin
1t oregano
Saute beef, onions, mushrooms & spices, set aside
Put corn, cilantro, lime juice, mushroom liquid and beans together and bring to boil, add meat mixture and saute for 10 minutes. Add extra cilantro at end. Serve with same accompaniments from other recipe.
