This tasty sauce for beef (or beet) Carpaccio can also used for tuna tartare or hamburgers. (Makes about 1 1/2 cups, NI for 1/2 cup)

Ingredients
  • ¾ cup whole-egg mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh lemon or lime juice
  • 2 to 3 tablespoons milk
  • salt and freshly ground pepper

Directions
  1. Put the mayonnaise in a bowl and whisk in the Worcestershire sauce and lemon juice.
  2. Whisk in enough milk to make a thin sauce that just coats the back of a wooden spoon.
  3. Taste the sauce, and adjust the seasoning with salt and pepper.
