Chocolate Peanut Butter Tofu Ice Cream Recipe

Ingredients
  • 12oz silken tofu
  • 1 cup peanut butter
  • ¾ cup maple syrup
  • 1 ¼ cups soy milk
  • 1 cup chocolate chips, melted

Directions
  1. In a blender, combine first four ingredients until mostly incorporated.
  2. Add the melted chocolate and blend until thoroughly combined.
  3. Chill thoroughly.
  4. Process in an ice cream maker according to directions.
  5. Alternatively, freeze in ice cube trays and whirl in the blender.
  6. Return to the freezer to harden into a scoopable ice cream.
