This amazingly delicious stew is a great way to clean out the pantry, if you’re like me and wind up with way too many cans on your hands! For Weight Watchers, this is only 3 pts for 1 ¼ cup serving.

Ingredients
  • 2 cups vegetable broth, divided
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 ½ cups cannellini beans, drained and rinsed
  • 6 oz water-packed tuna fish, drained
  • 2 cups canned diced tomatoes, undrained
  • ½ tsp dried oregano
  • ¼ tsp table salt
  • ¼ tsp black pepper
  • ¼ cup basil, chopped

Directions
  1. Heat ¼ cup of broth in a medium pot.
  2. Add onion; sauté until tender, about 5 minutes.
  3. Add garlic and cook about 1 minute.
  4. Add beans, tuna, tomatoes and oregano; stir in remaining broth and simmer for 5 minutes.
  5. Stir in salt, pepper and basil; simmer for 1 minute more.

Just made this tonight, except I added rice. Amazing! And I do NOT eat tuna! I hate it usually. My whole family thought it was delicious.
