How to make it

  • Preheat oven to 350.
  • Line 8 inch square baking pan with foil; extends ends over sides of
  • pan; set aside.
  • In medium bowl combine wafer crumbs, 1/2 c. flour, and brown sugar. Cut in margarine with pastry blender until mixture resembles coarse crumbs; firmly press into bottom of pan; bake 15 mins.
  • Meanwhile beat cream cheese and sugar with mixer on medium speed until well blended.
  • Add eggs and 2 T. flour; mix well.
  • Blend in 1 T. of lemon peel, lemon juice and baking powder; pour over crust.
  • Bake 25 to 28 mins. or until center is set. Cool completely.
  • Cover and refrigerate at least 2 hours or overnight.
  • Sprinkle with powdered sugar and garnish with remaining lemon peel.
  • Lift square from pan using foil; just before cutting into squares. Store leftovers in refrigerate.
