Creamy Lemon Squares

- 20 Nilla Wafers, finely crushed shopping list
- 1/4 c.firmly packed brown sugar shopping list
- 1 Pkg. (8oz) cream cheese, softened shopping list
- 2 eggs shopping list
- 3 T. grated lemon peel shopping list
- 1/4 t. baking powder shopping list
- 1/2 c. flour shopping list
- 1/4 c. cold margarine shopping list
- 1 c. granulated sugar shopping list
- 2 T. flour shopping list
- 1/4 c.fresh lemon juice shopping list
- 2 t. powdered sugar shopping list
How to make it
- Preheat oven to 350.
- Line 8 inch square baking pan with foil; extends ends over sides of
- pan; set aside.
- In medium bowl combine wafer crumbs, 1/2 c. flour, and brown sugar. Cut in margarine with pastry blender until mixture resembles coarse crumbs; firmly press into bottom of pan; bake 15 mins.
- Meanwhile beat cream cheese and sugar with mixer on medium speed until well blended.
- Add eggs and 2 T. flour; mix well.
- Blend in 1 T. of lemon peel, lemon juice and baking powder; pour over crust.
- Bake 25 to 28 mins. or until center is set. Cool completely.
- Cover and refrigerate at least 2 hours or overnight.
- Sprinkle with powdered sugar and garnish with remaining lemon peel.
- Lift square from pan using foil; just before cutting into squares. Store leftovers in refrigerate.
