Royal Icing Recipe
Royal Icing is a wonderful way to accent cakes with decorations and frost cookies with colorful, decorative artwork.

Ingredients
  • 3 large egg whites
  • 3 tsp cream of tartar
  • 4 cups of confectioners sugar, sifted
  • If using icing to frost cookies, 1/4 to 1/2 c water will be needed

Directions
  1. Place egg whites, cream of tartar and half of the confectioners sugar into a bowl.
  2. With an electric mixer at low speed, slowly add remaining sugar
  3. Beat on low speed for at least 2 minutes to assure even mixing
  4. Beat on highest speed for 8 - 10 minutes
  5. A knife drawn through the icing should leave a clear path
  6. Icing must be kept covered with a damp cloth or paper towel
  7. To COLOR icing, use paste or powdered colors
  8. To thin icing for DECORATING COOKIES:
  9. Add water a little bit at a time
  10. Icing will flow slowly in an even stream like heavy cream when ready
  11. Color icing in the same way as Royal Icing
