Hot Italian Sausage And Rice Recipe

Ingredients

11/2 lbs. hot italian sausage(casings removed)

5 c. cooked white rice

1c. cooked wild ricw

2 roasted peppers,chopped(about 1 cup)

2 8Oz. canssliced water chestnuts(drained and chopped)

2 c. chopped celery

1/4c. fresh Italian parsley,chopped

1/2c chopped pecans

1/4 fresh cilantro,chopped

2T olive oil

3c. coarsely chopped onions(about 2 medium)

4 cloves garlic,minced

1 serrano pepper,seeded and minced

1T fennel seed

1T. oregano

2T Old Bay Seasoning,divided

1/4t. cayenne pepper(optional)

Directions

Place cooke rice in a large mixing bowl Add the roasted peppers,water chestnuts,celery,parsley,pecans and cilantro and mix well. Heat oil in a large skillet. Add onions,garlic and serrano pepper and cook till soft,about 5 mins. Add italian sausage ,fennel seed,oregano,1T. old bay seasoning and cayenne. Cook over med heat till meat is well browned,about 20 mins. Add the meat to the rice mixture along with remaining old bay seasoning remaining and mix well. Taste and add more seasoning if desired. Serve warm
