Wonderful sausage and rice dish with some great tast in the seasonings. Like unstuffed peppers

Ingredients
  • 11/2 lbs. hot italian sausage(casings removed)
  • 5 c. cooked white rice
  • 1c. cooked wild ricw
  • 2 roasted peppers,chopped(about 1 cup)
  • 2 8Oz. canssliced water chestnuts(drained and chopped)
  • 2 c. chopped celery
  • 1/4c. fresh Italian parsley,chopped
  • 1/2c chopped pecans
  • 1/4 fresh cilantro,chopped
  • 2T olive oil
  • 3c. coarsely chopped onions(about 2 medium)
  • 4 cloves garlic,minced
  • 1 serrano pepper,seeded and minced
  • 1T fennel seed
  • 1T. oregano
  • 2T Old Bay Seasoning,divided
  • 1/4t. cayenne pepper(optional)

Directions
  1. Place cooke rice in a large mixing bowl Add the roasted peppers,water chestnuts,celery,parsley,pecans and cilantro and mix well. Heat oil in a large skillet. Add onions,garlic and serrano pepper and cook till soft,about 5 mins. Add italian sausage ,fennel seed,oregano,1T. old bay seasoning and cayenne. Cook over med heat till meat is well browned,about 20 mins. Add the meat to the rice mixture along with remaining old bay seasoning remaining and mix well. Taste and add more seasoning if desired. Serve warm
