Sunchoke Tomato Gratin with Cod

- 8 - 10 sunchokes, peeled and sliced thin shopping list
- 2 - 4 roma tomatoes, sliced into strips shopping list
- 1 small onion, sliced thin shopping list
- italian seasoning shopping list
- salt and pepper shopping list
- 2 small cod fillets shopping list
- 2 tablespoons olive oil shopping list
How to make it
- Preheat the oven to 375ยบ.
- Rub some olive oil on the surface of the gratin pan. Create a thin layer of the sunchokes. Season with salt and pepper.
- Create a light layer of the onions, and then arrange the tomato strips on top. Sprinkle a tablespoon of olive oil over it all.
- Create another round of layers but don't add the olive oil. Instead sprinkle some italian seasoning on top of the tomatoes and place the 2 cod fillets on top. Rub just a dab of olive oil on each fillet.
- Bake uncovered for about 30 minutes. Stick a fork in the gratin to see if the sunchokes are tender.
