One of my favourite Southern fried chicken recipes. You can use this same recipe for pork chops as well.

Ingredients
- Large and deep "Cast Iron" skillet
- 1 boiler/fryer cut into pieces or your favourite pieces ie. leg and thigh etc.
- 1 egg
- 2 Tablespoons water
- 1 teaspoon Tobasco or any other hot sauce
- 1 cup flour
- 2 Tablespoons cornmeal, finely ground
- 1 teaspoon salt
- 1 teaspoon pepper
- 1-1/2 to 2 teaspoons paprika
- 1-1/2 to 2 teaspoons onion powder
- 1-1/2 to 2 teaspoons garlic powder
- 2 cups oil for frying or shortening
- Make certain that you have enough oil to cover the chicken half way, in the skillet.
Directions
- Heat oil in skillet on medium/high till very hot, but not smoking
- Whip egg with water and hot sauce.
- Mix flour with salt, pepper, paprika. onion and garlic powder.
- Coat chicken pieces in flour
- Dip in egg mixture, to coat
- Coat again in flour.
- Fry pieces several at a time, making sure not to overcrowd the pan. Cook for approximately 20 minutes on each side, until skin is a dark golden brown.
- Avoid turning too often, as the chicken might stick to the skillet.
- Drain on paper towels.
- Serve with collard greens or coleslaw or a fresh leafy green salad and always, hot homemade biscuits. We always have honey on the table!
