My Southern Fried Chicken

- Large and deep "Cast Iron" skillet shopping list
- 1 boiler/fryer cut into pieces or your favourite pieces ie. leg and thigh etc. shopping list
- 1 egg shopping list
- 2 Tablespoons water shopping list
- 1 teaspoon Tobasco or any other hot sauce shopping list
- 1 cup flour shopping list
- 2 Tablespoons cornmeal, finely ground shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 1-1/2 to 2 teaspoons paprika shopping list
- 1-1/2 to 2 teaspoons onion powder shopping list
- 1-1/2 to 2 teaspoons garlic powder shopping list
- 2 cups oil for frying or shortening shopping list
- Make certain that you have enough oil to cover the chicken half way, in the skillet. shopping list
How to make it
- Heat oil in skillet on medium/high till very hot, but not smoking
- Whip egg with water and hot sauce.
- Mix flour with salt, pepper, paprika. onion and garlic powder.
- Coat chicken pieces in flour
- Dip in egg mixture, to coat
- Coat again in flour.
- Fry pieces several at a time, making sure not to overcrowd the pan. Cook for approximately 20 minutes on each side, until skin is a dark golden brown.
- Avoid turning too often, as the chicken might stick to the skillet.
- Drain on paper towels.
- Serve with collard greens or coleslaw or a fresh leafy green salad and always, hot homemade biscuits. We always have honey on the table!
