Melons Stuffed With Cherries And Whipped Cream Recipe
Quick and easy fresh fruit dessert. Frozen cherries or other fruit can be used in a pinch.

Ingredients
  • 2 small cantaloupes
  • 1 cup heavy cream chilled
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 lb. fresh, sweet cherries, pitted
  • shredded chocolate or toasted coconut for garnish

Directions
  1. With a 1/2 inch melon-ball scoop, scoop out the balls of cantaloupe, leaving a shell about 1/2 inch thick next to the rind. Refrigerate the cantaloupe balls and fresh cherries together in a shallow dish, and cool the melon shells separately, for about 1 hour.
  2. Whip the chilled cream until soft peaks form. Then gradually beat in the sugar and vanilla extract, continuing to beat until the cream holds its shape firmly.
  3. Drain the fruit and melon balls thoroughly and fold into the whipped cream with a rubber spatula.
  4. Spoon the whipped cream mixture into the cantaloup shells, heaping it high. Sprinkle with shredded chocolate or toasted coconut.
