How to make it

  • With a 1/2 inch melon-ball scoop, scoop out the balls of cantaloupe, leaving a shell about 1/2 inch thick next to the rind. Refrigerate the cantaloupe balls and fresh cherries together in a shallow dish, and cool the melon shells separately, for about 1 hour.
  • Whip the chilled cream until soft peaks form. Then gradually beat in the sugar and vanilla extract, continuing to beat until the cream holds its shape firmly.
  • Drain the fruit and melon balls thoroughly and fold into the whipped cream with a rubber spatula.
  • Spoon the whipped cream mixture into the cantaloup shells, heaping it high. Sprinkle with shredded chocolate or toasted coconut.
