Great salad for the holidays, I served it at Thanksgiving and it was raved about! New staple at all holiday meals.

Ingredients
  • 1bag fresh spinach leaves
  • 1 granny smith apple (Or your choice of apple)
  • 1/2 cup dried cranberries ( I use Craisins)
  • 1/2 - 1 cup glazed pecans
  • Goat Cheese (As much as you want)
  • Pecan vinaigrette:
  • 3 tbl sherry vinegar
  • 2 tbl honey
  • 1 tbl Dijon mustard
  • 2 tbl extravirgin olive oil
  • 1/2 tspn salt

Directions
  1. Make the vinaigrette, set aside.
  2. In large bowl, toss sliced apple pieces, spinach, cranberries, pecans and goat cheese.
  3. Pour vinaigrette over salad.
