Rhubarb Muffins

- 1 ½ c. brown sugar shopping list
- 2/3 c. oil shopping list
- 1 egg shopping list
- 1 c. buttermilk shopping list
- 1 tsp. salt shopping list
- 1 tsp. vanilla shopping list
- 1 tsp. baking soda shopping list
- 2 ½ c. flour shopping list
- 1 ½ c. diced rhubarb shopping list
- ½ c. chopped nuts shopping list
- Topping: shopping list
- ½ c chopped nuts shopping list
- 1/3 c. sugar shopping list
- 1 ½ tsp. flour shopping list
- 1 Tbsp. melted butter shopping list
How to make it
- Combine ingredients in order.
- Fill 2/3 full in paper-lined muffin tins or pour batter into 9x13 cake pan.
- Mix topping ingredients together; sprinkle over unbaked muffins.
- Bake in preheated 400°F oven for 20 to 25 minutes.

These were tangy and so good. Even though they were muffins, they reminded me of my Southern Grandmothers rhubarb crumb pie. Thank you for the delight!
