Rhubarb Muffins Recipe
This is similar to many other muffins, only this one is made with rhubarb. It has a sweet, nutty topping.

Ingredients
  • 1 ½ c. brown sugar
  • 2/3 c. oil
  • 1 egg
  • 1 c. buttermilk
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 2 ½ c. flour
  • 1 ½ c. diced rhubarb
  • ½ c. chopped nuts
  • Topping:
  • ½ c chopped nuts
  • 1/3 c. sugar
  • 1 ½ tsp. flour
  • 1 Tbsp. melted butter

Directions
  1. Combine ingredients in order.
  2. Fill 2/3 full in paper-lined muffin tins or pour batter into 9x13 cake pan.
  3. Mix topping ingredients together; sprinkle over unbaked muffins.
  4. Bake in preheated 400°F oven for 20 to 25 minutes.

These were tangy and so good. Even though they were muffins, they reminded me of my Southern Grandmothers rhubarb crumb pie. Thank you for the delight!
