How to make it

  • Preheat the oven to 350 F. Butter a 9 x 5 inch loaf pan. Line with aluminum foil, letting the edges overhang. Butter the foil.
  • Place the Brazil nuts, prunes, and cherries in a large bowl.
  • Stir in the flour, sugar, baking powder and salt.
  • Beat the eggs and sherry in a medium bowl.
  • Stir the egg mixture into the fruit mixture.
  • Spoon the batter into the prepared pan.
  • Bake for 70 - 80 minutes, or until brown and toothpick inserted into the center comes out clean.
  • Cool the cake in the pan for 1 hour. Turn out into the rack.
  • Carefully remove the foil and let cool completely.
  • Store the cake ell wrapped.

    How I love Brazil nuts! When I was a child, shelled Brazil nuts were not available. I would sit with my mother's iron upside down on my lap and use it as a base to smash the Brazil nuts with a hammer. It took a lot of smashing ! Isn't progress a wonderful thing? :-) I'm going to try this with medjool dates instead of prunes since I have a lot of those in my freezer. Chris
