How to make it

  • Preheat oven to 350 F. Butter a 9 inch square pan . Line with xaxed paper.
  • Sift the flour, baking powder, baking soda, and salt into a large bowl.
  • Beat the butter and sugar in alarge bowl withj an electric mixer at medium spped until creamy.
  • Add the eggs, one at time, until just blended after each addition.
  • With mixer at low speed, gradually beat in the bananas, lemon zest, and the dry ingredients, alternating with the yogurt.
  • Spoon the batter in the prepared pan.
  • Bake for 50 - 60 minutes or until inserting into the center a toothpick, it comes out clean.
  • Cool the cake in the pan for 10 minutes. Turn out unto a rack.
  • Carefully remove the paper and let cool completely.
  • YOGURT FROSTING
  • With mixer at low speed, beat the confectioners' sugar, yogurt, lemon, zest, and 1 tablespoon lemon juice in a large bowl until smooth and spreadable. Add more lemon juice, if needed.
  • Spread over the top and sides the cake.
