Frosted Banana Yogurt Cake

- 2 cups all purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup (1 1/2 stick) butter, softened shopping list
- 1 cup granulated sugar shopping list
- 2 large eggs at room temperature shopping list
- 1 cup mashed bananas (very ripe bananas) shopping list
- 1 tablespoon grated lemon zest shopping list
- 1/4 cup plain yogurt shopping list
- yogurt frosting shopping list
- 2 cups confectioners' sugar shopping list
- 2 tablespoon plain yogurt shopping list
- 1 tablespoon grated lemon zest shopping list
- 1/4 cup plain yogurt shopping list
How to make it
- Preheat oven to 350 F. Butter a 9 inch square pan . Line with xaxed paper.
- Sift the flour, baking powder, baking soda, and salt into a large bowl.
- Beat the butter and sugar in alarge bowl withj an electric mixer at medium spped until creamy.
- Add the eggs, one at time, until just blended after each addition.
- With mixer at low speed, gradually beat in the bananas, lemon zest, and the dry ingredients, alternating with the yogurt.
- Spoon the batter in the prepared pan.
- Bake for 50 - 60 minutes or until inserting into the center a toothpick, it comes out clean.
- Cool the cake in the pan for 10 minutes. Turn out unto a rack.
- Carefully remove the paper and let cool completely.
- YOGURT FROSTING
- With mixer at low speed, beat the confectioners' sugar, yogurt, lemon, zest, and 1 tablespoon lemon juice in a large bowl until smooth and spreadable. Add more lemon juice, if needed.
- Spread over the top and sides the cake.
