Comforting Chicen Soup

- 1 whole chicken skinned and cleaned with cavity washed well shopping list
- 3 medium carrots uncut shopping list
- 2 stalks celery including leafy top uncut shopping list
- 1 large white onion uncut shopping list
- 2 cloves fresh garlic shopping list
- 3 stalks fresh parsley shopping list
- 2 pounds frozen mixed vegetables shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
How to make it
- Place all ingredients except parsley and seasonings in soup pot covered.
- Allow coming to boil then lower heat and skim the surface.
- Add parsley and seasonings and allow soup to continue cooking slow boil until cooked.
- Cool soup overnight in refrigerator.
- Remove chicken and vegetables from cooled soup.
- Carefully remove chicken from the bone and shred into chunks then chop vegetables.
- While preparing chicken and vegetables soup should be heating in a large pot.
- Bring to boil then add vegetables that have been defrosted.
- When mixed vegetables are cooked add shredded chicken and fresh cooked vegetables.
- Serve hot with grated Parmesan cheese.
