How to make it

  • Place all ingredients except parsley and seasonings in soup pot covered.
  • Allow coming to boil then lower heat and skim the surface.
  • Add parsley and seasonings and allow soup to continue cooking slow boil until cooked.
  • Cool soup overnight in refrigerator.
  • Remove chicken and vegetables from cooled soup.
  • Carefully remove chicken from the bone and shred into chunks then chop vegetables.
  • While preparing chicken and vegetables soup should be heating in a large pot.
  • Bring to boil then add vegetables that have been defrosted.
  • When mixed vegetables are cooked add shredded chicken and fresh cooked vegetables.
  • Serve hot with grated Parmesan cheese.

    I like this version. although i'm not to keen on the frozen veg. I wonder how it would do with some leeks in it hey :)

    Sounds really good but i would use fresh veg.
    The only frozen veg i buy is peas.
    Good way to use up leftover vegetables.
