Low-Cal Smoked Salmon Tortilla Spirals Recipe
These are a lower calorie version of a popular appetizer. Each spiral has only 40 calories. Serve on a bed of shredded lettuce.

Ingredients
  • 1 cup low-fat pressed cottage or firm yogurt cheese ( low-fat natural yogurt left overnight to drain in coffee filter, cheesecloth or paper towel)
  • 2 tbsp. honey-style mustard
  • 4 10" flour tortillas
  • 1/2 lb. smoked salmon, thinly sliced
  • 2 tbsp. chopped fresh dill
  • 2 tbsp. chopped fresh chives or green onions
  • 4 leaves lettuce, shredded

Directions
  1. In a small bowl, combine cottage cheese and mustard. (If cheese is a little lumpy, puree in blender or food processor.)
  2. Arrange tortillas on counter and spread evenly with cheese spread.
  3. Arrange smoked salmon on top of cheese. (Leave about 1 inch border at top of each tortilla just covered with cheese so rolls will stick together.). Sprinkle with dill, chives and lettuce.
  4. Roll tortillas up tightly, pressing firmly to seal. Wrap well and refrigerate for 2 hours, or until ready to serve. Trim off ends of rolls, (eat them) and cut each roll slightly on the diagonal into 8 to 10 slices.
