Add champagne to this granita and you have a peach champanita...delicious and different and the mint is a must have, although after you have a few it won't matter. Enjoy, they are peachy and good. Add peach schnapps!!!!!

Ingredients
  • • 2 cups water
  • • 1 pound unpeeled ripe peaches
  • • 1/3 cup sugar
  • • 2 tablespoons fresh lemon juice
  • • 1 drop vanilla extract
  • • Mint leaves for garnish
  • champagne
  • peach schnapps

Directions
  1. Bring the water to a boil in a medium saucepan.
  2. Add the peaches and sugar and simmer gently over low heat for 30 minutes.
  3. Allow the peaches to cool thoroughly in the liquid and pass the contents of the pan through a fine-mesh strainer, scraping the solids to extract as much pulp as possible.
  4. Pour the strained liquid into a stainless steel or glass bowl and stir in the lemon juice and vanilla extract.
  5. Freeze for 45 minutes to 1 hour, scraping the ice crystals that form around the edges into the center every 10 minutes with a spatula. The mixture should be of an even, grainy consistency when ready.
  6. To serve, scoop the granite into chilled serving glasses and garnish with mint leaves.
