Carrot Cucumber Relish Recipe
This is one of my Mom's relishes that she's still making at age 88. It's a yummy accompaniment to meat. Different than your traditional relish.

Ingredients
  • 4 to 6 unpeeled cukes, coarsely ground (about 3 ½ Cups)
  • 6 medium carrots, coarsely ground (about 1 ½ Cups)
  • 2 medium onions, coarsely ground (about 1 Cup)
  • 2 ½ Cups sugar
  • 2 Tablespoons salt
  • 1 ½ Cups vinegar
  • 1 ½ Teaspoons celery seed
  • 1 ½ Teaspoons mustard seed

Directions
  1. Combine veggies and stir in salt, let stand for 3 hours.
  2. Drain
  3. Combine all other ingredients and bring to a boil.
  4. Add veggies and simmer for 20 minutes.
  5. Seal in jars.
  6. Makes 3 ½ to 4 pints
