How to make it

  • Scald milk and cool. Strain into a medium saucepan . Add butter, salt and pepper. Bring mixture to a rolling boil and add flour all at once.
  • Cook paste over low heat beating briskly with a wooden spoon until mixture forms a ball and leaves sides of pan.
  • Remove from heat. Beat in eggs (1 at a time) blending thoroughly before adding the next egg.
  • When paste is shiny and smooth mix in all, but 2 tablespoon cheese and cool..
  • Scoop out pieces of dough, the size o fan egg, form a ring, leaving a 2 ½ “diameter in center and place on a buttered cookie sheet.
  • Sprinkle with remaining 2 tbsp. Cheese and bake at 375 F. for 45 minutes or until puffed and golden brown.
