Beef Carnitas Recipe

Ingredients
  • 4 pounds chuck roast (fat trimmed)
  • 2 garlic cloves, minced
  • 1/2 teaspoon oregano (dried)
  • 1/2 teasoon cumin(ground)
  • 1 can green chile peppers (4 oz) chopped
  • 2 tabelspoons of chile powder
  • salt if desired

Directions
  1. Preheat your oven to 300 degrees.
  2. Line roast in heavy foil that is large enough to enclose the meat. In small bowl. mix the chile powder, green chile peppers, cumin, oregano, garlic, and salt if desired. Mix all together and rub all over the meat.
  3. Wrap the meat in the foil covering completely and put in roasting pan.
  4. Bake 300 degrees for approximately 4 hours. The meat will fall off the fork when done.
  5. Shred using two forks.
