Turkey Tortilla Pie

- 1 c. ricotta cheese shopping list
- 2 c. monterey jack cheese divided shopping list
- salt and pepper shopping list
- 6 6 in flour tortillas shopping list
- 3 c. mild salsa shopping list
- 6 ounces cooked turkey breast thinly sliced shopping list
- 3/4 c. corn niblets drained shopping list
- 6 Tbs fresh cilantro chopped shopping list
How to make it
- Preheat oven to 450. Lightly grease a 9 - in round baking dish.
- In a small bowl, combine ricotta, 1 cup Monterey Jack cheese, salt and pepper.
- Place 2 tortillas in the bottom of the baking dish. Spread 1 cup of the salsa over tortillas, layer the following in the order as listed; 2 ounces of turkey slices, top with 1/4 corn, 2/3 c. of the cheese mixture and 2 TBs cilantro. Repeat 2 more times for a total of 3 layers.
- Top with remaining 1 c. Monterey Jack cheese.
- Cover with foil and bake for 12 minutes. Remove foil and bake for an additional 8-10 minutes or until the cheese is bubbly and slightly browned. Let stand for 5 minutes before serving.

Tortillas are a great way to use up leftovers. I like this recipe a lot. I made a batch of soft pollenta and layered the leftover with some cheese, then baked in the oven for 20 minutes, until the cheese was nice and creamy.
