Red Raspberry Date Bars

- 3 cups red raspberries whole shopping list
- 3 cups dates chopped shopping list
- 1/4 teaspoon salt shopping list
- 1/4 cup water shopping list
- 1 tablespoon lemon juice shopping list
- Crust and Topping: shopping list
- 1-3/4 cup flour shopping list
- 1-3/4 cup rolled oats shopping list
- 1 cup brown sugar shopping list
- 1/4 teaspoon soda shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup butter melted shopping list
- Glaze: shopping list
- 2-1/2 cups powdered sugar sifted shopping list
- 1/3 cup lemon juice shopping list
- 1 tablespoon butter shopping list
- 1/4 teaspoon vanilla shopping list
How to make it
- Combine raspberries, dates and water.
- Cook over low heat stirring frequently until berries blend into thick puree.
- Add salt and lemon juice.
- Remove from heat and set aside.
- To make crust combine dry ingredients.
- Add melted butter and stir to crumb consistency.
- Pour slightly more than half the crumbs into a rectangular pan.
- Pat to form firm crust.
- Bake at 350 for 12 minutes.
- Spread filling over baked crust.
- Top with remaining crumbs.
- Bake at 350 for 30 minutes then cool to room temperature.
- To make glaze stir together powdered sugar, vanilla, and butter.
- Add lemon juice to make drizzling consistency.
- Drizzle glaze over top then cut and serve.
